Quince Steak Knife

I’m so honored to be making the steak knives for Quince, a fine dining restaurant in San Francisco. When Chef Michael Tusk invited me to make these knives, I looked at the dishes he makes and knew I wanted to make something quiet and premium.
Sets of 6+ knives come in an indigo dyed knife roll.

Materials:
Blade: AEB-L Stainless steel
Handle: Brass with brass pins
Measurements:
Blade Length: 4 3/8 inches
Handle Length: 4 7/8 inches
Overall Length: 9 1/4 inches
The blade is stainless steel, which will be easily maintained as it is used.
The handle is inspired by the soft curves and warm environment of the restaurant. I decided a brass handle would complement the space. The brass will also last much longer than a wooden option in a restaurant where the knives will be used and washed so often.
